THE RUM

HOW IT'S MADE

Big 5 Rum is made from sugar cane molasses, distilled through a copper still at St. Petersburg Distillery in Florida. We are the only producer who uses pure, distilled H2o to cut our sugar cane. We treat the H2o three times, running it through reverse osmosis and a deionization process to produce the purist spirit. 

The sugar cane is then cut at 188 proof in 4 stages using pure distilled H2o. The 4 stages include: 188 to 160, 160 to 140, 140 to 110 and 110 to 70 or 80 proof, depending on the type of rum we’re creating. We charcoal filter 2 times at each stage of the cut and following, allow for a 48-hour resting period. 

The resting period gives the water and alcohol time to marry, creating a smooth, delicate product with subtle sweet, sugar cane molasses flavors on the palate and hardly any burn.
